December 24, 2007. Christmas traditions live in each country -- all a little different. In Canada, a bilingual and two cultures country, at the federal level, it's interesting to borrow the French tradition of Christmas Eve -- gift giving and feasting and a remembering of the spiritual basis of Christmas, with the Midnight Mass. A special menu, and the piece de resistance, the centrepiece of the table, the Buche de Noel. The first carol is considered to be The First Noel, a French carol tradition. Whatever the tradition, the joy and the sharing and the thoughtfulness and the spirit of bonhomie are there, palpable, and a part of all that makes us human and caring. Tradition brings with it the past, and the remembering of those no longer with us. It also encourages the new to be a part of the past and the present, with a promise for the future. Take time for whatever traditions create your life and remember them, for what they are -- touchstones and guides. Be merry!

Today is the last day for the Art for the Rainforest Exhibit & Silent Auction, from 10 to 5 p.m. Some of Salt Spring's best artists have showcased, here, and have expressed the dynamic, diverse and passionate ways they see the natural world -- it's at ArtSpring! The auction is to benefit Salt Spring's threatened creekside rainforest. Don't forget Calvin's special Christmas menu -- yes, turkey is on it, but there are lots of other choices, including a special Swiss dessert! The Rock Salt Cafe, in Fulford Village, is also showcasing a special three course dinner menu, for the holiday season, and they're also featuring a New Year's Eve celebration -- reservations essential! On Dec. 23rd, at 4 p.m., at All Saints, in Ganges Village, the Anglican parish on the Island will present The Festival of Nine Lessons and Carols. Did you know that you can make a donation to support the Community Hospital, when you go through the cashier at GVM? Every donation made to the Lady Minto Hospital Foundation lights up the Christmas Tree and supports excellent patient care on Salt Spring. A Winter Meal "Linguine with greens and sea vegetable sauce ingredients: 1 pound linguine 1 tablespoon olive oil 2 cloves garlic, peeled and minced 1 shallot, peeled and chopped 1/2 red or green jalapeno, seeded and minced 14-ounce can whole peeled tomatoes 3 cups vegetable stock or water 1 large bunch of collared greens, stems removed, leaves washed and chopped 1/4 cup dulce (seaweed) Serves Four * cook the linguine until al dente * heat the olive oil in a large soup pot, add the garlic, shallot, and jalapeno pepper and gently saute until softened * add the tomatoes with their juice and mash with a spoon or potato masher * now, add the vegetable stock or water and bring to a boil * once boiling, add the chopped collard greens and simmer for 45 minutes * once cooked, remove and reserve the greens and whole tomatoes, but leave the broth * snip dried pieces of seaweed into the pot with a pair of scissors -- dulce, the purple seaweed from the North Atlantic, works well. Reduce the liquid over high heat for about 15 minutes until you have a slightly thickened, intensely flavored broth * toss the broth with reserved greens, tomatoes, and cooked linguine and serve immediately. Cauliflower with mustard cream: ingredients: 1 large head of cauliflower 1 teaspoon butter 1 shallot, peeled and finely chopped 1 cup heavy cream 1 teaspoon Dijon mustard 2 teaspoons capers Garnish with chopped fresh summer savory, if available Serves Four * bring a large pot of salted water to a boil and add the cauliflower * bring back to a boil, then reduce the heat and simmer the cauliflower for about 10 - 15 minutes until you can easily penetrate its core with a knife. Remove from the pot and drain. * when it's cool enough to handle, cut the cauliflower into florets and set aside * heat the butter in a saucepan, add the shallot, and saute until browned * add the cream and cook until the liquid has reduced by half * swirl in mustard, then add the cauliflower and capers * cook for a few more minutes, then add salt and pepper to taste and garnish with a teaspoon of savory. Grated beet salad with apple: Ingredients: 2 medium-sized Granny Smith apples, peeled and coarsely grated 2 medium-sized raw beets, peeled and grated 1 clove garlic, peeled and minced balsamic vinegar to taste extra virgin olive oil salt to taste Serves Four * put the grated apples and beets in a bowl and toss with the garlic and balsamic vinegar * drizzle with the oil and season to taste before serving." Peter O'Toole is a winner, in this one! Never seen "Ruthless People"? Bette Midler at her best! If your video store has some PBS specials on the shelf, don't overlook "Jewel in the Crown", or "Brideshead Revisited", or "The Forsyte Saga". Stuck with regular T.V.?? "It's a Wonderful Life", with Jimmy Stewart, is a timeless tale, as is "Miracle on 34th Street", with Natalie Wood as an engaging child, on the search for Santa. Another great humor tour de force? "My Cousin Vinney" fits the bill! The wonderful "Gosford Park" is another special world to involve yourself in, and "The Remains of the Day" is another one. How about Steve Martin? "My Blue Heaven" and "L.A. Story" are not to be missed! And, of course, at Christmas time, it's the Alistair Sim version of the Charles Dickens classic, "A Christmas Carol".
